8 Layer Bean Dip

Ingredients:

  • 4 cups Garden Life™ Premium Shreds
  • 3 cups Low-fat refried beans
  • 1 bunch Green onion, chopped
  • ½ cup Salsa
  • 3 med Ripe avocados, peeled,cored,mashed
  • 2 Tbsp. Lemon juice
  • ½ tsp. Salt
  • ¼ tsp. Pepper
  • 1 cup Fat-free sour cream
  • 1 ½ cup Low-fat Monterey Jack cheese, shredded
  • 1 ½ cup Low-fat Cheddar cheese, shredded
  • 2 med. Fresh tomatoes, chopped
  • 1-3 oz.can Black olives, sliced

Preparation:

In a medium sized bowl blend, avocados, onions, lemon juice and salt. Set aside.

In a large round platter, working in a circular motion, layer beans, avocado, sour cream, salsa, pepper and Garden Life™ Premium Shred. Top with shredded cheese, tomatoes and olives. Serve with veggies or chips.
