Herb Salad w/Salmon
- oz. pkg. EarthGreens® Herb Salad Mix
- 1 med. Avocado, peeled and sliced
- ½ cup Feta cheese, crumbled
- ¼ cup Balsamic dressing
- 1 Salmon filet
- 3 cloves Garlic, minced
- 2 Tbsp. Lemon juice
- 1 Tbsp. Extra virgin olive oil
- 1 pinch Sea salt
- 1 pinch Coarse ground pepper
Place a sheet of foil on a cookie sheet, place the salmon on top of the foil, and fold the edges of the foil to ensure juices do not leak through. Sprinkle with lemon juice and garlic. Season with sea salt and pepper. Drizzle with olive oil and marinade for 30-45 minutes in the refrigerator. Preheat the oven to 350 degrees.
Remove salmon from refrigerator and bake for 30 minutes. In a mixing bowl, toss EarthGreens® Herb Salad with avocado and feta cheese. Arrange salad on a large platter, place salmon on top and drizzle with balsamic dressing. Makes 4 servings.
