Lemony Arugula Blend Salad
- 1-5 oz. pkg. EarthGreens® Arugula Blend
- 2 Tbsp. Lemon peel, grated
- ¼ cup Grapes, sliced lengthwise
- ¼ cup Extra-virgin olive oil
- 1 ½ Tbsp. Fresh lemon juice
- ½ tsp. Salt
- 1/8 tsp. Black pepper
- 1 tsp. Fennel seeds, lightly crushed
In a small skillet, over low heat, add oil and lightly toast fennel seeds stirring frequently. Toast for 1-2 minutes, then set aside to cool.
Whisk together lemon juice, salt, and pepper in a large bowl. Add olive oil and continue whisking until well combined in a large bowl, toss EarthGreens® Arugula Blend, lemon peel and grapes. Divide evenly and place on salad plates. Drizzle with lemon vinaigrette and serve. Makes 4-6 servings.
